Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced bacon
  • 3 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced potatoes
  • 4 eggs
  • 4 flour tortillas
  • 1/2 cup shredded cheese

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, bacon, and garlic and cook until the vegetables are soft and the bacon is crisp, about 5 minutes.
  2. Add the chili powder, cumin, paprika, oregano, salt, and pepper and cook, stirring, for 1 minute.
  3. Add the potatoes and cook, stirring occasionally, until the potatoes are tender, about 8 minutes.
  4. Make 4 wells in the potato mixture and crack 1 egg into each well. Cover the skillet and cook until the eggs are cooked to your desired doneness, about 5 minutes.
  5. Meanwhile, warm the tortillas in the microwave for 30 seconds.
  6. To assemble the tacos, place a warm tortilla on a plate, top with some of the potato mixture, and top with shredded cheese. Repeat with the remaining tortillas and filling.
  7. Serve the tacos with your favorite toppings.
