Ingredients

  • 1 whole chicken (3 - 3 1/2 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon sea salt
  • 1 cup white wine

Directions

  1. Preheat the oven to 300°F.
  2. Rinse the chicken and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, garlic powder, oregano, thyme, pepper, and salt.
  4. Rub the oil mixture all over the chicken, making sure to get it in the crevices.
  5. Place the chicken in a roasting pan and pour the white wine over it.
  6. Roast the chicken in the preheated oven for 2 1/2 to 3 hours, basting it occasionally with the pan juices.
  7. When the chicken is cooked through (the internal temperature should be 165°F), remove it from the oven and let it rest for 10 minutes before carving.
