Ingredients

  • 1/2 cup quinoa
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup kale buds
  • 1/4 cup finely diced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup freshly squeezed lemon juice

Directions

  1. Rinse the quinoa in a fine-mesh strainer and drain well.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute.
  3. Add the quinoa, salt, and pepper, and stir to combine. Cook for 2 minutes, stirring occasionally.
  4. Add 1 cup of water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender.
  5. Remove from the heat and fluff with a fork. Transfer to a large bowl and let cool for 10 minutes.
  6. Add the kale buds, red onion, feta cheese, parsley, and lemon juice to the cooled quinoa and stir to combine.
  7. Serve immediately or chill in the refrigerator for up to 3 days.
