Ingredients

  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon honey
  • 1 ripe avocado, sliced
  • Salt and pepper, to taste
  • 2 green onions, chopped for garnish

Directions

  1. In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.
  2. Add the chicken strips to the skillet and cook until browned and cooked through. Remove from the skillet and set aside.

  7. Gently stir in the sliced avocado, being careful not to mash it.
