Ingredients
- 1/2 pound ground pork
- 1/2 pound cooked shrimp, peeled and deveined
- 1/2 cup julienned carrots
- 1/2 cup julienned cucumbers
- 1/2 cup julienned celery
- 1/2 cup julienned bell peppers
- 1/2 cup julienned red onion
- 1/2 cup bean sprouts
- 1/2 cup chopped peanuts
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup chopped basil
- 1/4 cup chopped scallions
- 8 ounces cooked vermicelli
- 1/4 cup fish sauce
- 1/4 cup vegetable oil
- 1 teaspoon sugar
- 1/4 teaspoon pepper
- 1 package spring roll wrappers
- Peanut Sauce for serving
Directions
- In a large bowl, combine the pork, shrimp, carrots, cucumbers, celery, bell peppers, red onion, bean sprouts, peanuts, cilantro, mint, basil, and scallions. Mix until well combined.
- In a separate bowl, combine the vermicelli, fish sauce, oil, sugar, and pepper. Mix until well combined.
- Add the vermicelli mixture to the pork and shrimp mixture and mix until well combined.
- Lay out a spring roll wrapper and spoon a heaping tablespoon of the mixture onto the wrapper. Roll up the wrapper and seal the edges with a touch of water.
- Repeat with the remaining wrappers and filling.
- Heat a large skillet with some oil over high heat. Add the spring rolls in batches and cook until golden brown and crispy, about 3 minutes per side.
- Serve with peanut sauce and enjoy!
