Ingredients

  • 2 cans of coconut milk
  • 4 cups of chicken or vegetable broth
  • 2 stalks of lemongrass, bruised
  • 1 inch piece of ginger, sliced
  • 3-4 kaffir lime leaves
  • 2 red chilies, sliced
  • 1 lb of protein (chicken, tofu, shrimp)
  • 1 cup of mushrooms, sliced
  • 2 tablespoons of fish sauce
  • 2 tablespoons of lime juice
  • 1 tablespoon of sugar
  • Salt and pepper to taste
  • Fresh cilantro and Thai basil for garnish

Directions

  1. In a large pot, combine coconut milk, broth, lemongrass, ginger, lime leaves, and chilies. Bring to a simmer over medium heat.
  2. Add protein of choice and mushrooms to the pot. Cook until protein is cooked through.
  3. Stir in fish sauce, lime juice, sugar, salt, and pepper. Adjust seasoning to taste.
  4. Remove lemongrass, ginger, and lime leaves from the soup.
  5. Divide soup into bowls and garnish with fresh cilantro and Thai basil.
  6. Serve hot and enjoy!
