Ingredients
- 1 cup boneless chicken, cut into small pieces
- ½ cup Split Bengal gram (chana dal), soaked for 3-4 hours
- 1 medium-sized onion, finely chopped
- 3 cloves garlic
- 1-inch piece ginger
- 2 green chilies, chopped
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- ½ teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
- 1 egg, beaten
- Fresh coriander leaves, for garnish

- In a pot, combine the soaked chana dal with chicken, chopped onion, garlic cloves, ginger, green chilies, and enough water to cover the ingredients.
- Bring the pot to a boil, then reduce the heat and simmer until the chicken and lentils are cooked and tender.
- Once cooked, drain any excess water and transfer the mixture to a food processor.
- Add cumin powder, garam masala, turmeric powder, and salt to the food processor.
- Blend everything together until you have a smooth mixture.
- Heat oil in a frying pan over medium heat.
- Take a small portion of the mixture and shape it into a flat kebab.
- Dip the kebab into beaten egg and carefully place it in the hot oil.
- Fry the kebab on both sides until golden brown and crispy.
- Remove the kebab from the pan and drain on a paper towel.
- Repeat this process with the remaining mixture.
- Garnish the Shami Kebabs with fresh coriander leaves.
