Ingredients

  • 8 oz. rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 8 oz. protein (chicken, shrimp, tofu, etc.)
  • 2 eggs
  • 1/4 cup fish sauce
  • 1/4 cup tamarind paste
  • 1/4 cup palm sugar
  • 1/4 cup water
  • 1/4 cup roasted peanuts, chopped
  • 1 cup bean sprouts
  • 2 green onions, chopped
  • 1/4 cup cilantro
  • Lime wedges for serving

Directions

  1. Soak the rice noodles in hot water for 15-20 minutes until they are soft. Drain and set aside.
  2. In a wok or large skillet, heat vegetable oil over medium-high heat. Add garlic and protein of choice, cook until protein is browned.
  3. Push the protein to one side of the wok, crack in the eggs and scramble until cooked.
  4. Add the drained noodles to the wok, followed by fish sauce, tamarind paste, palm sugar, and water. Toss everything together until the noodles are evenly coated and cooked through.
  5. Stir in half of the peanuts, bean sprouts, and green onions. Toss for another minute.
  6. Serve hot, garnished with remaining peanuts, green onions, cilantro, and lime wedges.
