Ingredients
- 8 oz. rice noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 8 oz. protein (chicken, shrimp, tofu, etc.)
- 2 eggs
- 1/4 cup fish sauce
- 1/4 cup tamarind paste
- 1/4 cup palm sugar
- 1/4 cup water
- 1/4 cup roasted peanuts, chopped
- 1 cup bean sprouts
- 2 green onions, chopped
- 1/4 cup cilantro
- Lime wedges for serving
Directions
- Soak the rice noodles in hot water for 15-20 minutes until they are soft. Drain and set aside.
- In a wok or large skillet, heat vegetable oil over medium-high heat. Add garlic and protein of choice, cook until protein is browned.
- Push the protein to one side of the wok, crack in the eggs and scramble until cooked.
- Add the drained noodles to the wok, followed by fish sauce, tamarind paste, palm sugar, and water. Toss everything together until the noodles are evenly coated and cooked through.
- Stir in half of the peanuts, bean sprouts, and green onions. Toss for another minute.
- Serve hot, garnished with remaining peanuts, green onions, cilantro, and lime wedges.
