Ingredients
- 1 lb dried red kidney beans
- 1 lb Andouille sausage, sliced
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 ribs celery, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 6 cups chicken broth
- Cooked white rice for serving
- Green onions, chopped for garnish
Directions
- Rinse the dried red beans and soak in water overnight.
- In a large pot, brown the Andouille sausage over medium heat.
- Add the chopped onion, bell pepper, celery, and garlic. Cook until softened.
- Stir in the bay leaves, thyme, oregano, cayenne pepper, salt, and pepper.
- Add the soaked red beans and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 2-3 hours until beans are tender.
- Mash some of the beans to thicken the mixture. Season with additional salt and pepper if needed.
- Serve the red beans over cooked white rice, garnished with chopped green onions.
