Ingredients

  • 3 pounds beef chuck roast, cut into cubes

  • 1 teaspoon ground cumin

Directions

  2. Place the toasted chiles in a bowl and cover with hot water. Let them soak for 20 minutes.
  3. In a blender, combine the soaked chiles, onion, garlic, cumin, oregano, salt, and pepper. Blend until smooth.
  4. Heat the vegetable oil in a Dutch oven over medium-high heat. Brown the beef cubes in batches and set aside.
  5. Add the chile sauce to the Dutch oven and cook for 5 minutes, stirring constantly.
  6. Return the beef to the pot and add beef broth. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours or until the beef is tender.
