Ingredients
- 3 lbs beef stew meat, cut into 1-inch cubes
- 5 dried guajillo chiles, stemmed and seeded
- 3 dried ancho chiles, stemmed and seeded
- 2 dried pasilla chiles, stemmed and seeded
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- 2 cups beef broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Directions
- In a large pot, heat the vegetable oil over medium-high heat
- Add the beef cubes and brown on all sides, then remove from the pot and set aside
- In the same pot, add the chopped onion and garlic, and cook until soft
- Add the dried chiles, cumin, and oregano, and toast for a few minutes until fragrant
- Add the beef broth and bring to a simmer
- Using an immersion blender, blend the chile mixture until smooth
