Ingredients
- 1 pound dried red kidney beans
- 1 pound smoked sausage, sliced
- 1 large onion, diced
- 1 green bell pepper, diced
- 3 stalks of celery, diced
- 4 cloves of garlic, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and black pepper to taste
- Cooked white rice, for serving
Directions
- Rinse the dried red kidney beans and soak them overnight in a large pot of water.
- In a large Dutch oven, cook the sliced smoked sausage over medium heat until browned.
- Add the diced onion, bell pepper, celery, and garlic to the pot and cook until vegetables are softened.
- Add the soaked red kidney beans, bay leaves, thyme, oregano, paprika, cayenne pepper, salt, and black pepper to the pot.
