This quick and easy Thai basil chicken recipe is bursting with flavors of spicy basil and tender chicken. With the addition of eggs for extra protein, this dish is perfect for a quick weeknight dinner.

Ingredients

  • 1 lb boneless, skinless chicken thighs, chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 tbsp vegetable oil
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 cup Thai basil leaves
  • 2 eggs, beaten
  • Salt and pepper to taste

Directions

  1. Heat oil in a pan over medium heat and add garlic and chilies. Cook until fragrant.
  2. Add chicken to the pan and stir-fry until browned.
  3. Mix in oyster sauce, soy sauce, fish sauce, and sugar. Stir well to combine.
  4. Add onion and bell pepper to the pan and cook until vegetables are softened.
  5. Push the chicken and vegetables to one side of the pan and pour beaten eggs onto the other side. Scramble the eggs until cooked.
  6. Combine everything in the pan and add Thai basil leaves. Toss to wilt the basil.
  7. Season with salt and pepper to taste.
  8. Serve hot with steamed rice.
