Ingredients

  • 2 pounds boneless pork shoulder, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped

  • 2 Anaheim peppers, seeded and chopped
  • 2 Jalapeno peppers, seeded and chopped
  • 1 poblano pepper, seeded and chopped
  • 2 cans (4 ounces each) diced green chiles
  • 1 cup chicken broth
  • 1 cup salsa verde
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Directions

  1. Start by seasoning the pork cubes with salt and pepper.
  2. Select the 'Saute' function on the Instant Pot and heat the vegetable oil.
  3. Add the seasoned pork cubes in a single layer and cook until browned on all sides. You might have to do this in batches.
  4. Remove the browned pork cubes and set them aside.
  5. Add the chopped onion to the Instant Pot and saute until softened.
  6. Include the minced garlic and continue sauteing for another minute.
  7. Add the Anaheim peppers, Jalapeno peppers, and poblano pepper to the pot. Saute until they start to soften.
  8. Stir in the diced green chiles, chicken broth, salsa verde, cumin, dried oregano, salt, and black pepper.
  9. Return the browned pork cubes to the pot and give everything a good stir.
  10. Close the Instant Pot lid and ensure the pressure valve is set to the 'Sealing' position.
  11. Select the 'Manual' or 'Pressure Cook' function and set the timer for 30 minutes on high pressure.
  12. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, and then do a quick release.
  13. Carefully open the Instant Pot lid and stir the Chile Verde.
  14. If desired, use a potato masher or immersion blender to slightly puree the sauce.
  15. Garnish with fresh cilantro before serving.
