- 8 oz rice noodles
- 2 chicken breasts, thinly sliced
- 2 eggs
- 1 cup bean sprouts

- 1 tbsp brown sugar
- 1 lime, juiced

Directions
- Soak rice noodles in hot water for 8-10 minutes until softened, then drain and set aside.
- In a wok or large skillet, heat oil over medium-high heat and add chicken. Cook until browned, then push chicken to one side.
- Crack eggs into the pan and scramble until cooked through. Add garlic, bell pepper, and bean sprouts, stir-fry for 2-3 minutes.
- Add rice noodles to the pan and toss with the vegetables. Stir in soy sauce, fish sauce, brown sugar, and lime juice.
- Cook for another 2-3 minutes until noodles are heated through and coated in the sauce.
