Chicken Pad Thai is a popular Thai street food dish made with stir-fried noodles, tender chicken, crunchy vegetables, and a tangy sauce. This recipe is easy to follow and will bring the flavors of Thailand right to your kitchen.

Ingredients

  • 8 oz rice noodles
  • 2 chicken breasts, thinly sliced
  • 2 eggs
  • 1 cup bean sprouts
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 lime, juiced
  • 1/4 cup peanuts, chopped
  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped

Directions

  1. Soak rice noodles in hot water for 8-10 minutes until softened, then drain and set aside.
  2. In a wok or large skillet, heat oil over medium-high heat and add chicken. Cook until browned, then push chicken to one side.
  3. Crack eggs into the pan and scramble until cooked through. Add garlic, bell pepper, and bean sprouts, stir-fry for 2-3 minutes.
  4. Add rice noodles to the pan and toss with the vegetables. Stir in soy sauce, fish sauce, brown sugar, and lime juice.
  5. Cook for another 2-3 minutes until noodles are heated through and coated in the sauce.
  6. Serve hot, garnished with peanuts, green onions, and cilantro.
