Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 2 cups whole milk
  • 3 potatoes, peeled and diced
  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, celery, and garlic to the pot and cook for 5 minutes.
  3. Stir in the flour and cook for an additional minute.
  4. Slowly pour in the chicken broth and milk, stirring constantly.
  5. Add the potatoes and bring to a boil.
  6. Reduce the heat to low and simmer for 15 minutes.
  7. Add the shrimp, scallops, and parsley and simmer for an additional 10 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot.
