Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans artichoke hearts, drained and chopped
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  2. Add the artichoke hearts and cook for another 5 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for 20 minutes.
  4. Stir in the cream and thyme and season with salt and pepper to taste. Simmer for another 5 minutes.
  5. Puree the soup with an immersion blender or in a blender until smooth.
  6. Serve the soup hot and enjoy!
