Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 cans artichoke hearts, drained and chopped
3 cups vegetable broth
1 cup heavy cream
1 teaspoon dried thyme
Salt and pepper to taste
Directions
Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
Add the artichoke hearts and cook for another 5 minutes.
Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for 20 minutes.
Stir in the cream and thyme and season with salt and pepper to taste. Simmer for another 5 minutes.
Puree the soup with an immersion blender or in a blender until smooth.
Serve the soup hot and enjoy!
