Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups long grain white rice
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups cooked, shredded chicken
  • 1/2 cup diced sweet green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup frozen peas
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally, until the onion is softened.
  2. Add the rice and stir to coat with the oil. Cook for 2 minutes, stirring occasionally.
  3. Add the chicken broth, oregano, thyme, cumin, salt and pepper and bring to a boil. Reduce the heat to low, cover and simmer for 15 minutes.
  4. Stir in the chicken, green pepper, red pepper, peas, tomatoes and cilantro and bring to a boil. Reduce the heat to low, cover and simmer for 15 minutes.
  5. Remove from the heat and let sit, covered, for 5 minutes. Serve hot.
