Ingredients

  • 4 (6-ounce) halibut fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • 2 tablespoons butter
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the halibut with salt and pepper.
  2. Add the halibut to the skillet and cook until golden brown and just cooked through, about 3 minutes per side. Transfer the halibut to a plate and set aside.
  3. Reduce the heat to medium-low and add the garlic to the skillet. Cook, stirring constantly, until fragrant, about 1 minute.
  4. Add the white wine and bring to a simmer. Cook until the liquid is reduced by half, about 2 minutes.
  5. Stir in the butter and lemon juice and cook until the butter is melted and the sauce is thickened, about 2 minutes.
  6. Return the halibut to the skillet and turn to coat with the sauce. Cook until heated through, about 1 minute.
  7. Transfer the halibut to a platter and spoon the sauce over the top. Sprinkle with the parsley and serve.
