Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, diced (optional)
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the black beans, corn, bell pepper, jalapeno pepper, red onion and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, garlic powder, cumin, salt and pepper.
  3. Pour the dressing over the salsa and mix until everything is evenly coated.
  4. Serve immediately or refrigerate for up to 3 days.
