Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup pineapple chunks
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1/2 cup chicken broth
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Heat the oil in a large pot over medium heat. Add the garlic and onion and cook, stirring often, until softened, about 5 minutes.
  2. Add the bell pepper, cumin, smoked paprika, coriander, salt, and pepper. Cook, stirring, for another minute.
  3. Add the pineapple, tomatoes, and chicken broth. Bring to a simmer and cook for 5 minutes.
  4. Add the chicken and cook until cooked through, about 10 minutes.
  5. Stir in the cilantro and serve.
