Baked Lemon Pepper Chicken Thighs and Rice

Ingredients

  • 4 chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon lemon pepper seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup white rice
  • 2 cups chicken stock

Directions

  1. Preheat oven to 375 degrees F.
  2. In a small bowl, combine garlic powder, onion powder, lemon pepper seasoning, salt, and black pepper. Rub seasoning mixture on both sides of each chicken thigh.
  3. Heat a large oven-safe skillet over medium-high heat. Add olive oil to the skillet and heat until shimmering. Add chicken thighs to the skillet and cook for about 3 minutes on each side until golden brown.
  4. Add rice and chicken stock to the skillet and stir to combine. Bring mixture to a boil. Reduce heat to low, cover skillet with a lid, and simmer for 20 minutes.
  5. Remove lid and transfer skillet to preheated oven. Bake uncovered for 15 minutes.
  6. Remove skillet from oven and let rest for 5 minutes before serving.
