Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 (14-ounce) can coconut milk
  • 2 cups vegetable stock
  • 1 pound shrimp, peeled, deveined, and chopped
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper, to taste

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, ginger, turmeric, cumin, coriander, paprika, and cayenne pepper and cook, stirring occasionally, until the onion is softened and fragrant, about 5 minutes.
  2. Add the coconut milk and vegetable stock and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  3. Add the shrimp and cook until the shrimp are just cooked through, about 5 minutes.
  4. Stir in the cilantro and season with salt and pepper. Serve hot.
