Ingredients

  • 3/4 cup mashed potatoes
  • 1/2 cup sugar
  • 1 teaspoon nutmeg
  • 2 eggs
  • 1/2 cup butter, melted
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Vegetable oil for frying

Directions

  1. In a large bowl, mix together the mashed potatoes, sugar, nutmeg, eggs, and melted butter.
  2. In a separate bowl, mix together the flour, baking powder, and salt.
  3. Combine the wet and dry ingredients and mix until a dough forms.
  4. On a lightly floured surface, roll out the dough to 1/4 inch thick.
  5. Cut out the donuts using a donut cutter or a biscuit cutter.
  6. In a large, deep skillet, heat the oil to 375 degrees F.
  7. Fry the donuts in the oil for 2-3 minutes on each side, or until golden brown.
  8. Remove the donuts from the oil and drain on paper towels.
  9. Serve immediately, or store in an airtight container.
