Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes
  • 2 cups vegetable broth
  • 8 ounces kale, chopped
  • 8 ounces noodles of your choice
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and sauté for 3-4 minutes, until the onion is softened.
  3. Add the ginger, soy sauce, sesame oil, and red pepper flakes and sauté for 1 minute.
  4. Add the vegetable broth and bring to a boil.
  5. Add the kale and noodles and simmer for 8-10 minutes, until the noodles are cooked through.
  6. Season with salt and pepper to taste.
