Ingredients

  • 6 medium red potatoes, cut into 1/2-inch cubes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup olive oil
  • 1/4 cup white vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. In a large saucepan, bring the potatoes to a boil in salted water. Boil for 10 minutes, or until the potatoes are tender.
  2. Drain the potatoes and place them in a large bowl. Add the parsley, celery, and red onion.
  3. In a small bowl, whisk together the olive oil, white vinegar, salt, and pepper. Pour over the potatoes and vegetables and mix until everything is evenly coated.
  4. Cover and refrigerate for at least 2 hours before serving.
