Ingredients
- 1 cup of apricot jam
- 1/2 cup of butter
- 1/2 cup of sugar
- 1/2 cup of all-purpose flour
- 1/4 teaspoon of salt
- 1/2 teaspoon of baking powder
- 2 tablespoons of cold water
Directions
- Preheat the oven to 350°F (175°C). Grease and flour eight 4-ounce (125 mL) ramekins.
- In a medium bowl, cream together the butter and sugar until light and fluffy.
- Add the flour, salt, and baking powder and mix until combined. Slowly add the cold water, stirring until a dough forms.
- Divide the dough into 8 pieces and press each piece into the bottom and sides of the prepared ramekins.
- Fill each ramekin with 1 tablespoon of apricot jam.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Remove from the oven and allow to cool before serving.
