Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups diced apples
  • For topping:
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, and then add the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  6. Fold in the diced apples until evenly distributed throughout the batter.
  7. Scoop the batter into the prepared muffin tin, filling each liner about 3/4 full.
  8. In a small bowl, mix together the sugar and cinnamon for the topping. Sprinkle the mixture over the muffin batter.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
