Ingredients

  • 2 cups old-fashioned oats
  • 1 cup chopped nuts (e.g., almonds, walnuts)
  • 1 cup dried fruits (e.g., cranberries, raisins, apricots)
  • 1/2 cup honey or maple syrup
  • 1/4 cup nut butter (e.g., almond butter, peanut butter)
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup flaxseeds
  • 1/4 cup chia seeds
  • 1/4 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Directions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine oats, nuts, dried fruits, pumpkin seeds, sunflower seeds, flaxseeds, chia seeds, and salt.
  3. In a small saucepan, heat the honey or maple syrup, nut butter, and vanilla extract over medium heat. Stir until well combined and heated through.
  4. Pour the warm liquid mixture over the dry ingredients and mix until everything is evenly coated.
  5. If using mini chocolate chips, fold them into the mixture at this point.
  6. Transfer the mixture to the lined baking dish and press it down firmly using a spatula or your hands.
  7. Bake in the preheated oven for 20-25 minutes, or until the top turns golden brown.
  8. Remove from the oven and let it cool completely in the baking dish.
  9. Once cooled, lift the bars out of the dish using the parchment paper and cut them into desired bar sizes.
  10. Store the bars in an airtight container for up to a week or individually wrap them for longer shelf life.
