Ingredients

  • 2 cups basmati rice
  • 1 bunch fresh dill
  • 1 bunch fresh parsley
  • 1 bunch fresh cilantro

  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cups water

Directions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. Wash the herbs thoroughly and finely chop them. Set aside.
  3. In a large pot, bring 4 cups of water to a boil. Add the vegetable oil, salt, and black pepper to the boiling water.
  4. Add the drained rice to the boiling water and cook for 5 minutes, or until the rice is slightly tender. Drain the rice and set aside.
  5. In the same pot, add a layer of rice, followed by a layer of mixed herbs. Continue layering until all the rice and herbs are used, finishing with a layer of rice on top.
  6. Place a clean kitchen towel over the pot and cover tightly with a lid. Cook over medium heat for 30 minutes to steam the rice and herbs.
  7. Remove the pot from the heat and let it sit undisturbed for 5 minutes.
  8. Gently fluff the rice with a fork to mix the herbs evenly throughout the rice.
  9. Serve the Sabzi Polo hot as a side dish or as a main course. Enjoy!
