Ingredients
- 4 medium-sized potatoes
- 2 hard-boiled eggs
- 1/4 cup mayonnaise
- 2 tablespoons dijon mustard
- 1 tablespoon white vinegar
- 1/4 cup diced celery
- 1/4 cup diced red bell pepper
- 1/4 cup diced pickles
- Salt and pepper to taste
Directions
- Start by washing and peeling the potatoes. Cut them into bite-sized pieces.
- Place the potato pieces in a pot and cover them with water. Add a pinch of salt and bring to a boil. Cook the potatoes until they are fork-tender, around 10-12 minutes.
- While the potatoes are cooking, dice the hard-boiled eggs, celery, red bell pepper, and pickles. Set them aside.
- In a small bowl, mix together the mayonnaise, dijon mustard, white vinegar, salt, and pepper. Set aside.
- Once the potatoes are cooked, drain them and let them cool slightly.
- In a large bowl, combine the cooked potatoes, diced eggs, celery, red bell pepper, and pickles.
- Pour the mayonnaise mixture over the potato mixture and gently toss until everything is well coated.
- Taste and adjust the seasoning with more salt and pepper if needed.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
