Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 (14.5 oz.) can diced tomatoes
- 1 (14.5 oz.) can black beans, drained and rinsed
- 1 (14.5 oz.) can corn, drained
- 1 (14.5 oz.) can chicken broth
- 2 cups cooked chicken, shredded or cubed
- Salt and pepper to taste
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and garlic and cook, stirring, for 5 minutes or until the onion is softened.
- Add the chili powder, smoked paprika, and oregano and cook for 1 minute.
- Transfer the mixture to a slow cooker.
- Add the diced tomatoes, black beans, corn, chicken broth, and cooked chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in salt and pepper to taste.
- Serve hot.
