Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 (14.5 oz.) can diced tomatoes
  • 1 (14.5 oz.) can black beans, drained and rinsed
  • 1 (14.5 oz.) can corn, drained
  • 1 (14.5 oz.) can chicken broth
  • 2 cups cooked chicken, shredded or cubed
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook, stirring, for 5 minutes or until the onion is softened.
  3. Add the chili powder, smoked paprika, and oregano and cook for 1 minute.
  4. Transfer the mixture to a slow cooker.
  5. Add the diced tomatoes, black beans, corn, chicken broth, and cooked chicken.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Stir in salt and pepper to taste.
  8. Serve hot.
