Divide the mixture into 6 equal portions and shape each portion into a patty.
Place a hard-boiled egg in the center of each patty, and wrap the patty around the egg, making sure it is completely sealed.
Set up a shallow bowl with the flour, and a second shallow bowl with the breadcrumbs.
Roll each egg in the flour and shake off the excess, then roll in the breadcrumbs and shake off the excess.
Heat the vegetable oil in the air-fryer. When the oil is hot, carefully place the scotch eggs in the air-fryer basket and cook for 15 minutes at 375°F.
Remove from the air-fryer and serve hot.
Interesting Facts
Scotch eggs are a traditional British snack that has been around since the 1700s.
The origin of the name is uncertain, but some believe it is derived from the term “scotched egg” which referred to eggs that had been boiled and then scotched (lightly fried).
Scotch eggs are usually served cold as a picnic food, but can also be served hot.
