Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1½ cups long grain white rice
  • 3 cups chicken broth
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.
  2. Add the rice and stir to coat in the oil. Cook for 1 minute.
  3. Add the chicken broth and bring to a boil. Reduce heat to low and simmer, covered, for 10 minutes.
  4. Remove from heat and let sit for 5 minutes. Fluff with a fork and season with salt and pepper to taste.
