Traditional German Warm Potato Salad

Ingredients

  • 3 pounds potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1 cup diced onion
  • 2 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. Place potatoes in a pot and cover with cold water. Bring to a boil and cook until tender, about 15 minutes.
  2. Drain potatoes and return to the pot. Add the butter and toss to coat.
  3. In a small bowl, whisk together the vinegar, mustard and sugar. Pour over the potatoes and toss to combine.
  4. Add the onion and parsley and stir to combine. Season with salt and pepper to taste.
  5. Transfer to a serving bowl and serve warm.
