Ingredients
- 3 ripe bananas, mashed
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup vegetable oil
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mix together the mashed bananas, sugar, vanilla extract, oil and eggs until smooth.
- In a separate bowl, stir together the flour, baking soda and salt.
- Slowly mix the dry ingredients into the wet ingredients until just blended.
- Pour the batter into the prepared loaf pan.
- Bake in the preheated oven for 45 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
