Ingredients
3 ripe bananas, mashed
1/2 cup sugar
1 teaspoon vanilla extract
1/2 cup vegetable oil
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, mix together the mashed bananas, sugar, vanilla extract, oil and eggs until smooth.
In a separate bowl, stir together the flour, baking soda and salt.
Slowly mix the dry ingredients into the wet ingredients until just blended.
Pour the batter into the prepared loaf pan.
Bake in the preheated oven for 45 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
