Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup cornstarch
  • 2 large eggs, lightly beaten
  • 1/4 cup vegetable oil
  • 1/4 cup white vinegar
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1/4 cup packed brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon sriracha (optional)
  • 2 tablespoons sesame oil
  • 1/4 teaspoon ground ginger
  • 2 green onions, thinly sliced
  • 1/4 cup white sesame seeds

Directions

  1. In a medium bowl, combine the chicken cubes with the cornstarch. Stir until the chicken is evenly coated.
  2. In a separate bowl, beat the eggs. Heat the oil in a large skillet over medium-high heat.
  3. In batches, dip the chicken cubes into the beaten eggs and then add them to the skillet. Cook until the chicken is golden brown and cooked through, about 8 minutes per batch.
  4. Remove the chicken from the skillet and set aside.
  5. In a small bowl, whisk together the vinegar, light soy sauce, dark soy sauce, brown sugar, garlic, sriracha (if using), sesame oil, and ground ginger. Pour the sauce into the skillet and cook over medium heat until the sauce thickens, about 5 minutes.
  6. Add the chicken back to the skillet and toss to coat with the sauce. Cook for 2 minutes more.
  7. Sprinkle with the green onions and sesame seeds and serve.
