Ingredients

  • 1 (1-1 1/2 pound) pork tenderloin
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper
  • 1/2 pound potatoes, cut into 1-inch cubes
  • 1/2 pound green beans, trimmed and cut into thirds

Directions

  1. Preheat the air fryer to 350°F.
  2. In a small bowl, combine the olive oil, Dijon mustard, whole grain mustard, garlic powder, onion powder, thyme, smoked paprika, salt, and pepper.
  3. Rub the mixture all over the pork tenderloin, making sure to coat it evenly.
  4. Place the pork tenderloin in the air fryer basket and cook for 20 minutes.
  5. Add the potatoes and green beans to the air fryer basket and cook for an additional 20 minutes, or until the pork is cooked through and the potatoes and green beans are tender.
