Ingredients
- 2 tablespoons olive oil
- 1 large leek, sliced
- 2 large potatoes, peeled and diced
- 1 cup mushrooms, sliced
- 4 cups vegetable broth

- 1 cup shredded cheddar cheese
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the leek and potatoes and sauté for 5 minutes.
- Add the mushrooms and sauté for an additional 3 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low and simmer for 20 minutes.
- Stir in the salt, pepper, and cream.
- Add the cheddar cheese and stir until melted.
- Serve hot.
