Leek, Potato, Mushroom and Cheddar Soup

  • 2 tablespoons olive oil
  • 1 large leek, sliced
  • 2 large potatoes, peeled and diced
  • 1 cup mushrooms, sliced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup heavy cream
  • 1 cup shredded cheddar cheese


  1. Heat the olive oil in a large pot over medium heat.
  2. Add the leek and potatoes and sauté for 5 minutes.
  3. Add the mushrooms and sauté for an additional 3 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes.
  6. Stir in the salt, pepper, and cream.
  7. Add the cheddar cheese and stir until melted.
  8. Serve hot.
