Ingredients

  • 3 medium beets, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 bay leaves
  • 4 cups vegetable broth

  • 1 can diced tomatoes

  • 1/2 teaspoon black pepper
