These succulent pork chops are filled with a mixture of crispy bacon, sweet apples, and savory herbs, creating a perfect balance of flavors. A perfect dish for a special occasion or a cozy family dinner.

Ingredients

  • 4 bone-in pork chops
  • 6 slices of bacon
  • 1 apple, peeled and diced
  • 1/2 cup breadcrumbs
  • 2 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. Preheat the oven to 375°F.
  2. In a skillet, cook the bacon until crispy. Remove from the skillet and crumble.
  3. In the same skillet, sauté the diced apple until golden brown. Add garlic, thyme, and breadcrumbs. Cook for another 2 minutes.
  4. Remove the skillet from heat and stir in the crumbled bacon. Season with salt and pepper.
  5. Using a sharp knife, cut a pocket into each pork chop. Stuff the bacon-apple mixture into the pockets.
  6. Season the outside of the pork chops with salt and pepper.
  7. Heat olive oil in an oven-safe skillet. Sear the pork chops for 3-4 minutes on each side.
  8. Transfer the skillet to the oven and bake for 20-25 minutes, or until the internal temperature reaches 145°F.
  9. Let the pork chops rest for 5 minutes before serving.
