These Cajun Crawfish Quesadillas are packed with spicy crawfish tails, melted cheese, and a hint of Cajun seasoning, all sandwiched between crispy tortillas. Perfect for a quick weeknight meal or a festive party appetizer.

Ingredients

  • 1 lb cooked crawfish tails
  • 2 cups shredded Monterey Jack cheese
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 8 flour tortillas
  • 2 tbsp butter
