Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tsp turmeric
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish

Directions

  1. In a large pot or Dutch oven, heat some oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onion, red bell pepper, and garlic. Cook until softened.
  4. Stir in the rice, coconut milk, chicken broth, soy sauce, fish sauce, brown sugar, turmeric, red pepper flakes, salt, and pepper.
