Ingredients

  • 2 pounds ground venison
  • 1/2 cup cold water
  • 2 teaspoons curing salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon liquid smoke
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon coriander

Directions

  1. In a large mixing bowl, combine ground venison, water, curing salt, black pepper, garlic powder, onion powder, mustard seeds, liquid smoke, cayenne pepper, paprika, and coriander.
  2. Mix the ingredients until well combined and allow the mixture to sit in the refrigerator for 24 hours to develop flavor.
  3. Preheat the oven to 200°F (95°C).
  4. Shape the venison mixture into logs or patties and place on a baking sheet lined with parchment paper.
  5. Bake the summer sausage for 4-5 hours, or until the internal temperature reaches 160°F (70°C).
