  • 1 cup cooked wild rice

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil, for frying

Directions

  1. In a large bowl, combine the cooked wild rice, grated zucchini, chopped hazelnuts, Parmesan cheese, parsley, minced garlic, salt, black pepper, and paprika. Mix well to combine.
  2. Add the beaten eggs to the mixture and stir until everything is evenly coated.
  3. Gradually add the all-purpose flour, stirring until the mixture becomes thick and sticky.
  4. Heat olive oil in a large skillet over medium heat.
  5. Scoop about 1/4 cup of the fritter mixture and drop it into the skillet, flattening it slightly with the back of a spoon. Repeat with the remaining mixture, leaving some space between each fritter.
