Heat olive oil in a large skillet over medium-high heat. Add the zucchini, onion, garlic, oregano, basil, salt, and pepper and cook until vegetables are softened, about 5 minutes.
Spread the zucchini mixture over the bottom of the unbaked pie crust. Sprinkle cherry tomatoes over the zucchini. Top with the mozzarella and parmesan cheese.
Bake in preheated oven for 25-30 minutes, or until cheese is melted and bubbly.
Let cool for 10 minutes before serving.
