Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • 1/2 head green cabbage, chopped

Directions

  1. Bring the rice and vegetable broth to a boil in a medium saucepan. Reduce the heat to low, cover, and simmer for 18 minutes. Turn off the heat and keep the lid on for an additional 10 minutes.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 3 minutes, stirring occasionally. Add the garlic, oregano, salt, and pepper and cook for an additional 1 minute.
  3. Add the cabbage and cook for 5 minutes, stirring occasionally. Add the cooked rice and stir to combine.
  4. Continue cooking for an additional 5 minutes, stirring occasionally, until the cabbage is tender. Serve hot.
