Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 large zucchinis, diced
- 1 red bell pepper, diced
- 1 (14.5 ounce) can diced tomatoes
- 1 cup vegetable broth

- Salt and pepper to taste
- 1/4 cup freshly grated Parmesan cheese
Directions
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion and garlic and cook for 3 minutes, until the onion is softened.
- Add the zucchini, bell pepper, tomatoes, vegetable broth, oregano, and basil. Bring the mixture to a boil.
