Ingredients

  • 1 cup spelt flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup almond milk, or other non-dairy milk
  • 1/4 cup vegan chocolate chips, plus more for topping

Directions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together spelt flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together coconut oil, maple syrup, vanilla extract, and almond milk until well combined.
  4. Add wet ingredients to the dry ingredients and stir until just combined. Fold in chocolate chips.
  5. Divide batter between the 12 muffin cups, filling each one about 3/4 full. Sprinkle a few extra chocolate chips on top of each muffin, if desired.
  6. Bake for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let cool in the muffin tin for 5-10 minutes, then transfer muffins to a cooling rack to cool completely.
