Bourbon Butternut Breakfast Hash

Ingredients

  • 1/4 cup bourbon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 butternut squash, peeled and diced
  • 1/4 cup chopped fresh sage
  • 4 eggs
  • 1/4 cup grated Parmesan cheese

Directions

  1. In a large skillet over medium-high heat, add the bourbon and bring to a simmer. Simmer for 2 minutes, or until reduced by half.
  2. Add the olive oil and onion and cook for 5 minutes, or until softened.
  3. Add the salt, pepper, squash, and sage and cook for 8 minutes, stirring occasionally.
  4. Create four wells in the hash and crack an egg into each well. Cover the skillet and cook for 5 minutes, or until the eggs are cooked to your desired doneness.
  5. Sprinkle with Parmesan cheese and serve.
